About Domaine du Mortier Pangramme

Just as a linguistic pangram utilizes every letter of the alphabet, the name "Pangramme" conjures the very essence of completeness and variety. It is with this ethos that Cyril and Fabien Boisard introduce us to an authentic wine, brimming with life and deeply connected to its terroir, faithfully reflecting the environment from which it originates. The estate, established in 1996 as Domaine du Mortier in Saint Nicolas de Bourgueil, in the Loire Valley (France), is renowned for its approach of forgoing artifice. Certified under "Nature et Progrès", a stringent version of the organic label that forbids the use of synthetic chemicals, these vintners have become ardent advocates for low-intervention winemaking. Their dedication and expertise are encapsulated in every bottle, as exemplified by Domaine du Mortier Pangramme.

Starting with 100% organic viticulture employing natural products such as nettle, horsetail, or tender willow shoots, Domaine du Mortier Pangramme is the product of the chenin blanc grape variety, renowned for its refreshing acidity, intricate aromatic complexity, and potential for prolonged aging. The grapes are hand-harvested in small crates with meticulous selection and gently pressed. Subsequently, the juice naturally ferments in barrels without any "artifices" like added yeasts, enzymes, or tannins, and sulfur is only used sparingly or not at all, if the harvest allows. Finally, the wine matures for nine months in these same vessels followed by an additional four months in sandstone jars.

The result is Domaine du Mortier Pangramme, a barrel-fermented pure chenin that embodies the splendor of diversity, completeness, and a passion for the land. A highly successful white wine whose true magnificence lies in the commitment and meticulous attention to detail.
